Switch CI to Nix

Switching the CI pipeline over to Nix ensures that builds as well as checks run the same way on developer machines as well as on CI.

Ich hätte noch ein paar Optimierung Tricks die pipeline um einiges schneller zu machen, ohne auf eine kleinere texlive Version zu wechseln, da muss ich mal aber wann anders rann setzen.

Macht diese MR die MR !12 redundant oder übersehe ich etwas?
